First was the sopapilla cheesecake that was such a hit.
I also found a recipe for an easy key lime pie at Huckleberry Love that I made Tuesday. It was yummy and so simple, so I thought I'd share it with you.
Here's what you'll need:
3 14oz. cans of sweetened condensed milk
1/2 cup sour cream
3/4 cup key lime juice
1 tablespoon grated key lime zest
1 9-inch graham cracker crust
Graham cracker crust
1-1/4 cups graham cracker crumbs (approximately 10 full-sized graham crackers)
3 tablespoons of sugar
5 tablespoons butter, melted
I used a store-bought graham cracker crust. If you plan to make your own crust, do that first so that it can cool. Mix together the graham cracker crumbs and sugar, then add the melted butter. Make sure all crumbs are coated with butter. Pour the crumb mixture into a 9-inch pie pan and press evenly into the bottom and sides of the pie pan. Bake the crust at 325 degrees for 10-15 minutes until lightly browned. Allow the crust to cool completely before filling.
Now, if you're like me and will be using a store-bought crust, follow any directions for preparation on the crust packaging.
Preheat the oven to 350 degrees.
In a medium-sized bowl, combine your condensed milk, sour cream and lime juice. Mix well. Next, zest your limes until you have approximately 1 tablespoon. Add the lime zest to the mixture in the bowl and mix well.
Pour the mixture into the prepared graham cracker crust. Bake for 5-8 minutes. Do not allow it to brown.
Chill the pie completely before serving. I made some fresh whipped cream to top each slice. Sadly, I didn't get a picture of a slice before it all disappeared. I have to act quickly around my house.
